Born from a shared passion, Ferme aux Chiconnettes specialises in the traditional cultivation of field-grown endives. Methods passed down through previous generations are preserved, including traditional forcing beds and harvesting by hand. Expertise in both growing and processing the endives helps ensure the quality and traceability of the products.

Endive, an emblematic winter vegetable of the Nord-Pas-de-Calais region, is sold in the farm shop and used in the on-site food production kitchen. Endive confits, soups, vinaigrettes and other preparations are made there, combining traditional expertise with new recipes.

Products from Ferme aux Chiconnettes are also available from delicatessens, garden centres, farm shops and restaurants.

Located in a village of around 300 inhabitants, Ferme aux Chiconnettes is a local business born from its owners’ passion for endives. After working as pastry chefs and chocolatiers in Arras for 13 years, they developed a particular interest in this vegetable following their induction into the Confrérie de l’Endive de France, the French Endive Brotherhood.

They subsequently decided to change careers and established a small farm specialising in the cultivation of field-grown endives and their culinary transformation. While the endives are grown on the farm, Pascal transforms them in the adjoining production kitchen. He prepares endive confits, soups and vinaigrettes, showcasing this traditional local vegetable, also known as the “chicon de terre”.
